Preparation steps

1.

Cover spelt with water and soak overnight. Dissolve instant broth in 300 ml (approximately 1 cup) boiling water. Heat spelt, broth and soaking water in pan and bring to a boil. Reduce heat and simmer for about 40 minutes. Drain spelt. Remove cabbage outer leaves and cut out core. Rinse cabbage, dry and cut into thin strips. Heat oil in a very large skillet and sauté cabbage. Add spelt to pan and sauté. Halve 2 pomegranates and squeeze out juice on a citrus juicer. Deglaze pan with pomegranate juice. Reduce heat and simmer for 10 minutes. Halve remaining pomegranate and remove seeds. Rinse chives, shake dry and cut into thin rings. Season cabbage mixture with salt, pepper, sugar and cardamom. Garnish with pomegranate seeds and chives and serve.
