1 shallot
1 garlic clove
1 Tbsp parsley (chopped)
2 slices Toast
1 egg
½ tsp instant powdered Broth
2 Tbsps breadcrumbs (if needed)
2 Tbsps clarified butter

2 Tomatoes
1 small garlic clove (pressed through a garlic press)
1 tsp Dill (chopped)
1 Tbsp White vinegar
1 onion (red)
1 bunch Arugula
4 Ciabatta
2 Tbsps Garlic oil

Preparation steps

Soak toast in lukewarm water, then squeeze to remove liquid. Peel and finely chop shallot and garlic. Mix together ground meat, toast, shallot, garlic, instant powdered broth, parsley and egg. Knead well to combine. If needed, add enough breadcrumbs so that mixture holds together. Form mixture into four patties and fry in hot clarified butter on both sides.

Cut ciabatta rolls in half and brush cut sides with garlic-oil. Toast in oven. Rinse, trim and shake arugula dry. Rinse tomatoes and cut 8 beautiful, thin slices. Peel remaining tomatoes and cut into small cubes. Mix dill, garlic and vinegar with diced tomatoes. Season with salt and pepper.

Peel and slice onion into thin rings. Layer bottom halves of ciabatta rolls with arugula, tomato slices and onion rings. Top with burgers. Top burgers with a few onion rings and diced tomatoes. Place top halves of rolls on sandwiches and slice in half diagonally. Serve immediately.
