salt
1 handful parsley
2 sprigs mint
1 shallot
4 Tbsps balsamic vinegar
6 Tbsps olive oil
freshly ground peppers
6 ozs Goat cheese
2 Tbsps Pine nuts

Preparation steps

1.

Rinse, trim and blanch the broccoli in salted water for 6-8 minutes.

For the dressing, rinse the parsley and mint, shake dry, pluck and finely chop the leaves. Peel and finely chop the shallot. Stir in the herbs, balsamic and oil and season with salt and pepper.

Crumble the cheese and add to the pine nuts. Season well.

3.

Drain, rinse and drain again, the broccoli. Arrange on a large plate.

Serve drizzled with the dressing and showered with the cheese.
