Even smarter

The snack bars are baked from spelt flour, as it is healthier than wheat flour. It contains more protein, vitamins, minerals and is rich in filling fibres and unsaturated fatty acids, which are good for the heart.

Caraway generally makes food more digestible, as its essential oils soothe the stomach and can even be an effective remedy for flatulence.

You can sprinkle the snack bars with any seeds and kernels of your choice! Try flax seeds for sprinkling or a mixture of different seeds.

Preparation steps

Crumble yeast, dissolve in lukewarm milk and stir in sugar. Place flour in a bowl and make a well in the center. Pour yeast mixture into well in flour, cover and let rest until small bubbles form on surface, about 15 minutes. Add salt and oil to flour mixture and knead together with a stand mixer. Cover dough and let rest in a warm place about 30 minutes. Knead dough briefly, cover and let stand again in a warm place about 30 minutes.

Preheat oven to 180°C (approximately 350°F). On a floured surface, roll out dough about 5 mm (approximately 1/8 inch) thick. Cut dough with a sharp knife into strips about 1 cm (approximately 1/4 inch) wide and roll lightly to form breadsticks.  Place breadsticks on a baking sheet lined with parchment paper. Brush breadsticks with water and sprinkle with caraway, poppy and sesame seeds as desired. Bake breadsticks until golden, about 15 minutes. Serve breadsticks warm or cooled.
