- ½ cup fresh Basil (chopped)
- 1 onion (peeled and finely chopped)
- 2 cloves garlic cloves (peeled and minced)
- 6 cups cherry Tomatoes (halved)
- 1 ½ Tbsps olive oil (divided)
- 4 fully cooked breaded chicken cutlets
- salt (to taste)
- freshly ground Black pepper (to taste)
- 1 cup Mozzarella (shredded)
- 4 cups uncooked Bowtie pasta

Preparation steps

In the bowl of a food processor, combine basil, onion, garlic, and tomatoes. Pulse 12 to 15 times, or until coarsely chopped.

Preheat oven to 375ºF. Drizzle a little olive oil in the bottom of a 13 x 9-inch casserole pan and arrange the chicken in the pan. Spoon tomato mixture over the chicken and season with salt and pepper. Sprinkle with mozzarella cheese and bake for 15 to 20 minutes, or until heated through.

Meanwhile, cook pasta according to package instructions until al dente. Drain well and toss with remaining olive oil.

Divide pasta between individual bowls and top with breaded chicken cutlet and sauce. Serve.
