- 1 Tbsp sunflower oil
- 300 grams black Beans
- 600 milliliters Vegetable broth
- 8 peppercorns
- 4 cloves
- 1 bay leaf
- 2 Oranges
- 400 grams Smoked sausage (or chorizo, cured pork)
- 400 grams Smoked meat (or chorizo, cured pork)
- salt
- freshly ground peppers
- 1 splash White vinegar
- 250 grams Spinach
- 1 Tbsp butter

Preparation steps

Soak beans overnight in water. Peel onions and garlic and chop finely. Heat oil in a saucepan and saute onions and garlic until soft. Add drained beans and 600 ml (approximately 2 1/2 cup) of vegetable stock. Place peppercorns, bay leaf and cloves into a spice bag and add to the pan. Simmer, covered, for about 1-1 1/4 hours. Peel oranges with a sharp knife and slice. Cut smoked sausages into bite-sized pieces.

Rinse and shake dry spinach. Season beans with salt, pepper and white wine vinegar. Heat butter in a pan and saute spinach briefly, season with salt and pepper. Arrange stew in bowls and top with spinach, orange slices and sausages. Serve immediately.
