250 grams Whole wheat flour
2 tsps Baking powder
50 grams butter
1 egg
3 Tbsps honey
100 grams Yogurt (0.1% fat)
100 grams Whipped cream
300 grams Blueberries
12 Paper baking molds
1 Muffin tin (with 12 wells)
powdered sugar (for dusting)

Preparation steps

Mix flour and baking powder. Melt the butter and let it cool slightly, so that it is still liquid. Stir together honey, yogurt and creme fraiche. Stir in melted butter.

Mix in flour mixture and fold in blueberries, so that all the ingredients are well mixed. Place paper baking cups into the wells of the muffin tin and fill 3/4 high with batter. Bake at 180°C (approximately 350°F) in a preheated oven until golden brown, about 30 minutes. Remove from oven, allow to cool for 5 minutes in the tin, then lift out and allow to cool. Serve dusted with powdered sugar.
