1 ¼ tsps cinnamon
¼ cup Canola oil
¾ cup Apple juice
1 egg
1 cup fresh Blueberries

Preparation steps

1.
Heat oven to 350 degrees F/175 degrees C. Grease a muffin pan.
2.
In a large bowl combine flour, salt, baking soda, baking powder and cinnamon. Stir to mix.
3.
Add in the oil, apple juice concentrate, egg and blueberries. Stir until incorporated.
4.
Pour batter into the muffin pan, filling 3/4 of the way up.
5.
Bake for 20-25 minutes.
