- 250 Sour cream
- 300 grams Blackberry
- 2 Tbsps Cherry brandy
- 6 Tbsps honey
- 150 grams Whipped cream
- For garnish
- Blackberry
- Lemon balm
- powdered sugar

Preparation steps
1.
Puree blackberries and strain through a sieve.

With a hand mixer, beat creme fraiche a few minutes. Stir in blackberry puree, Kirsch and honey. Whip cream to stiff peaks and fold into blackberry mixture. Divide blackberry fool among glasses and refrigerate until set, about 1 hour. Garnish with blackberries and lemon balm and serve dusted with powdered sugar.
