- 4 Chicory (stem cut off, leaves separated)
- ⅔ cup Sour cream
- 2 Tbsps Crème fraiche
- 1 tsp Curry powder
- cayenne pepper
- 8 hard-boiled eggs (chopped)
- 2 Apple (e. g. Golden Delicious, cored and chopped)
- 1 cup canned Mandarin orange
- 2 Tbsps roasted Peanuts (chopped)

Preparation steps
1.
Set some of the chicory leaves aside to use as garnish and slice the rest. Sieve the mandarins but retain the juice.
2.
Mix together the sour cream, crème fraîche, curry powder and 3-4 tbsp of mandarin juice and season with salt and cayenne pepper.
3.
Decoratively arrange the whole chicory leaves on plates or in bowls and add the remaining ingredients. Drizzle with the dressing and serve sprinkled with the nuts.
