Wash the jars in hot soapy water, rinse well and put in a low oven to dry and become warm. Wipe the outside of the filled jars and cover the surface of the jam with waxed circles. Seal tightly with lids or transparent covers and elastic bands. This must be done while the jam is hot not warm, to prevent mould forming.

Preparation steps

1.
Put the cranberries and water into a large pan with a tightly fitting lid.
2.
Bring to a boil, then reduce the heat and simmer gently for 10 minutes until softened.
3.
Add the sugar and stir over a low heat until dissolved. Increase the heat and boil rapidly until setting point is reached.
4.
Ladle into warm sterilised jars and seal tightly.
