- ¾ cup Whole wheat flour
- ¾ cup all-purpose flour
- 1 ½ tsps Baking powder
- ½ tsp baking soda
- 1 cup rolled oats (plus extra for sprinkling)
- ⅓ cup caster sugar
- 2 eggs
- 2 Tbsps clear honey
- ¾ cup Buttermilk
- ¼ cup sunflower oil
- 1 tsp vanilla extract
- 1 cup Blueberries

Preparation steps
1.
Heat the oven to 200°C / 400°F. Line a 12 hole muffin tin with paper liners.
2.
Sift together both flours, baking powder and baking soda into a mixing bowl. Stir in the rolled oats and sugar.
3.
Whisk together the eggs and honey until smooth. Add the buttermilk, oil and vanilla and whisk until blended.
4.
Add to the flour mixture and mix until only just combined. The mixture will be lumpy. Fold in the blueberries.
5.
Spoon into the paper liners and sprinkle lightly with oats.
6.
Bake for 20-25 minutes, until risen and golden. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.
