- For the crust
- 1 ¾ cups ginger Biscuit
- 0.333 cup unsalted butter
- For the filling
- 1 ⅛ cups cream cheese
- 0.333 cup caster sugar
- 1 tsp grated lemon zest
- 4 Tbsps cream (18% fat)
- 13 ozs Strawberries (sliced)
- For the glaze
- ½ cup Red currant jelly
Preparation steps
1.
For the crust: mix together the biscuit crumbs and butter. Press over the base and sides of a 20cm|8" flan dish or tin. Chill until set.
2.
For the filling: beat together the cream cheese, sugar, lemon zest and cream until blended.
3.
Spoon into the flan case and spread evenly.
4.
Arrange the strawberries on top of the filling.
5.
Heat the redcurrant jelly in a small pan until melted. Spoon or drizzle over the strawberries and chill for up to 2 hours before serving.
