Bell Cookies
Ingredients
- For the dough
- 250 grams honey
- 250 grams brown sugar
- 150 grams butter
- 100 grams ground almonds
- 400 grams Pastry flour
- 1 tsp cinnamon
- 1 pinch ground cloves
- 1 pinch ground Cardamom
- 1 pinch ground Mace
- 1 pinch ground allspice
- ½ lemon (zested)
- 1 Tbsp Cocoa
- 1 egg
- 1 tsp potatoes
- 2 Tbsps water
- For decorating
- 150 grams powdered sugar
- 2 Tbsps lemon juice
- green, yellow and red Food coloring
Preparation steps
For the dough, mix the honey, sugar and butter in a saucepan. Heat until the sugar has dissolved, stirring constantly. Remove from the heat and pour into a large mixing bowl. Let cool. Add the almonds, the flour, the spices and the egg. Knead into a smooth dough. Mix the baking soda and the water until smooth. Add the baking soda to the dough and knead until the dough is no longer sticky. If necessary, add a little flour. Cover the bowl with plastic and chill for at least 4 hours (or overnight).
Preheat the oven to 180°C (approximately 350°F),
Line a baking sheet with parchment paper. Roll out the dough on a floured surface until 5-6 mm (approximately 1/4 inch) thick. Use a cookie cutter to cut out bell shapes. Place the cookies on the baking sheet. Bake for about 18 minutes. Remove from the oven and let cool on a wire rack.
For the decoration, mix the powdered sugar and lemon juice into a thick icing. Divide the icing into smaller portions and dye each portion with food coloring. Spread one of the icing portions on the cookies. Decorate the cookies with the remaining icing. Let dry and serve.
