- 12 large Lettuce
- 6 Beets (cooked)
- 3 red Apple
- 3 tart, green grünschaliger Apple (such as Granny Smith)
- 3 Tbsps lemon juice
- ½ bunch Chives
- 8 Tbsps Pumpkin seed
- salt
- freshly ground peppers
- 4 Tbsps olive oil
- 8 Tbsps freshly grated Parmesan

Preparation steps

Rinse and spin dry lettuce leaves. Layer 4 oval dishes with lettuce. Cut beetroot into thin slices. Rinse apples, cut into quarters and core, cut into fine strips and mix with 1 tablespoon of lemon juice. Rinse chives, shake dry and cut into small rings. Toast pumpkin seeds in a dry pan, let cool.

Season remaining lemon juice with salt and pepper, add oil. Season with sugar to taste. Arrange beetroot slices on lettuce leaves, sprinkle with a little vinaigrette and top with apple slices. Drizzle apples with remaining vinaigrette and sprinkle with pumpkin seeds, freshly grated parmesan and chives. Serve.
