- 3 ripe Tomatoes (chopped)
- ½ cup Red onions (diced)
- ½ cup yellow peppers (diced)
- 6 fresh Basil (finely chopped)
- 2 Tbsps olive oil (plus more for bread)
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 6 slices French Bread (cut into 1/2-inch thick)
- 2 whole garlic cloves (peeled)
- ¼ cup Parmesan (shredded)
Preparation steps

Preheat oven to 350º F / 180º C.

Combine tomatoes, onion, pepper, basil and 2 tablespoons olive oil. Season with salt and pepper and mix until well incorporated. Set aside.
3.
Place bread on a baking sheet and drizzle with olive oil. Bake until golden, about 8 minutes. Rub top side of each slice with garlic.
4.
Stir tomato mixture and spoon equal portions onto the bread slices. Top with shredded Parmesan and serve.
