- 1 red onion
- 1 garlic clove
- 30 milliliters olive oil
- 1 Tbsp brown sugar
- 3 Tbsps balsamic vinegar
- 30 grams Tomato paste
- salt
- 1 generous pinch Wasabi powder

Preparation steps

Rinse the beet, and cook in boiling water for 45 minutes until soft. Peel and chop the onion and garlic. Heat the olive oil in a saucepan, and sauté the onion and garlic until soft. Add the sugar and caramelize lightly. Deglaze with the vinegar and remove from the heat.

Drain the beet, peel while still hot, and chop. Puree the beet, onion mixture, and the tomato puree in a blender. Season to taste with salt and wasabi. Heat the beet mixture briefly, then transfer into a bottle and seal.
