Beef Wraps with Cabbage

Season the cabbage with salt and leave to steep for 15 min. Wring out and mix with the lemon juice, oil and crème fraîche. Season with the sugar and ground black pepper.
Place some of the cabbage mixture onto a slice of beef, roll up and place on a platter, seam side down. Serve garnished with the onion rings and the chives.
