- 500 grams Sirloin steak
- 2 stalks Leeks
- 1 tsp finely chopped ginger
- 4 dried chili peppers
- 1 can Mandarin orange (175 grams or about 6 ounces, drained)
- 4 Tbsps vegetable oil
- 2 tsps Szechuan pepper
- 2 Tbsps Rice wine
- 4 Tbsps soy sauce
- 150 milliliters Chicken broth
- 1 tsp sugar
- salt
- freshly ground peppers

Preparation steps

Cut the meat into thin slices.

Rinse and trim the leek and cut the white and light green parts into thin strips. Crush the chillies in a mortar very finely. Drain the mandarins in a colander, saving the juice.

Heat a wok or frying pan, add oil and fry the meat in portions, then set aside. Fry the leek, ginger, Sichuan pepper and chile in oil, add the rice wine, soy sauce and broth pour and bring to a boil. Stir in the meat, season with sugar and salt. Add the mandarins and 6 tablespoons of the juice and warm through. Serve in warmed bowls.
