Beef Tajine with Couscous
- 800 grams Beef (such as Shoulder)
- 2 onions
- 2 garlic cloves
- 4 tomatoes
- 2 tablespoons olive oil
- 1 teaspoon freshly grated ginger
- ½ teaspoon ground Turmeric
- ½ teaspoon ground Cumin
- 1 pinch Ground cinnamon
- 250 milliliters Beef broth
- 1 Eggplant
- 2 Bell pepper (Red and yellow)
- 300 grams Couscous (Instant)
- 1 teaspoon lemon juice
- freshly ground peppers
Rinse meat, pat dry and chop into small pieces. Peel onions and garlic, halve onions and cut into strips, finely chop garlic. Rinse tomatoes, remove stems and cut into pieces.
Heat oil in a tajine pot and brown meat on all sides. Add onions, garlic, ginger, turmeric, cumin powder and cinnamon and deglaze pot with broth. Add tomatoes, season with salt and simmer, covered, for about 1 hour on low heat. Add more broth, if needed.
Rinse and pat dry eggplant, cut into slices and season with salt, let stand for 10 minutes. Pat dry and cut into cubes. Rinse and dry bell peppers, halve and remove seeds and ribs, cut into small cubes. Add eggplant and peppers to the pot and simmer for 20 more minutes.
Prepare couscous according to package instructions.
Season tajine with lemon juice, salt and pepper and serve with couscous.
