- ⅓ cup sunflower oil
- 6 cups chuck steak (trimmed and cubed)
- 1 cup Pancetta
- 4 cups button Mushrooms (brushed clean)
- 8 shallots (quartered)
- 2 cloves garlic cloves (chopped)
- 2 Tbsps all-purpose flour
- 3 cups Red wine
- 2 bay leaves
- 2 cups Beef stock
- 2 Tbsps flat-leaf parsley (chopped)
- salt
- freshly ground peppers

Preparation steps
1.
Heat a little oil in a casserole dish set over a moderate heat until hot. Season the beef and seal in batches, using a little fresh oil for each batch.
2.
Add the pancetta, shallots, mushrooms, and garlic and fry for 2 minutes. Add the flour, stir well, and cook for 1 minute.
3.
Deglaze the dish with a little red wine, allowing it to reduce by half before adding the remainder.
4.
Stir in the bay leaves and stock, and then pour everything into a slow cooker.
5.
Cover and cook on low for 6-7 hours until the beef is tender and pulls away between your fingers.
6.
Season to taste with salt and pepper, and serve with a garnish of chopped parsley.
