800 grams Beef
6 onions
50 grams clarified butter
1 Tbsp Tomato paste
salt
peppers
2 cloves
2 bay leaves
1 tsp Juniper berries
800 milliliters Beef broth
200 grams Pickle
2 Tbsps Caper
2 Tbsps breadcrumbs
2 Tbsps freshly chopped parsley

Preparation steps

1.

Rinse meat, pat dry and cut into bite-sized cubes. Peel onions and cut into rings.

Heat some butter in a pan and brown meat, few pieces at a time, on all sides. Remove from the pan. Saute onions in the same pan and add tomato paste. Return meat to the pan and season well with salt and pepper, cloves, bay leaves and juniper berry. Add broth. Cover and simmer for about 2 hours on medium heat. Add more broth as needed.

Cut pickles diagonally into pieces and add with capers to the pan. Add breadcrumbs and simmer until stew thickens. Season heavily with salt and pepper.

Sprinkle with parsley and serve.
