- 2 large onions
- 2 cloves garlic cloves
- 4 Tbsps olive oil
- 1 tin Tomatoes (large, 800 g)
- mince
- 4 Tbsps breadcrumbs
- 1 egg
- 2 Tbsps Parmesan (freshly grated)
- 3 Tbsps mixed Italian herbs (finely chopped)
- 1 ½ cups Long grain rice
- salt
- freshly ground peppers
- paprika (hot)
- Parmesan (to garnish)
- parsley (to garnish)

Preparation steps

Peel and finely dice the onions and garlic. Heat 2 tbsp oil and sweat the onions and garlic until translucent. Take half out of the pan. Add the tomatoes and their juice to the onions in the pan and mash with a potato masher. Simmer without a lid for about 30 minutes. Season with salt and pepper and add paprika to taste.

Combine the mince with the rest of the onions and garlic, breadcrumbs, egg, Parmesan and herbs and season with salt and pepper. Using moistened hands shape into balls the size of table tennis balls and fry on all sides in the rest of the oil. Place in the tomato sauce and cook gently for about 10 minutes, until cooked right through.

Put the rice into a pan with approximately double the amount of salted water, bring to the boil and cook for about 20 minutes, until the water has been absorbed.

Serve the meatballs in tomato sauce on the rice, sprinkled with Parmesan and garnished with parsley leaves.
