- 500 grams Leg of beef
- 4 cloves
- 2 Juniper berries
- 1 bay leaf
- 10 peppercorns
- Salt and peppers
- 400 grams Broccoli
- 10 Slices of toast
- 50 grams butter

Preparation steps

Rinse, peel and chop the soup vegetables. Peel and quarter the onions. Place the soup vegetables, onions, beef, cloves, juniper berries, bay leaf, peppercorns and 2 teaspoons of salt in a large pot. Stir in 2 liters (approximately 8 cups) of water and bring to a simmer. Simmer, while skimming, for 2 hours.

Rinse the broccoli and divide into florets. Strain the broth through a sieve into a pot. Season with salt and pepper to taste. Add the broccoli and cook until al dente, about 5 minutes.

Use stentils to cut the word 'millennium' from the bread. Melt the butter in a skillet. Add the letters and toast until golden on both sides. Serve the soup garnished with the toast.
