1 Tbsp Pastry flour
350 milliliters Cider
150 milliliters Whipped cream

1 lemon (juiced and zested)

2 red-skinned Apple
1 tsp sugar
400 grams cooked, chilled Beef tip (into 8 slices)
freshly ground peppers

Preparation steps

For the cider sauce, peel the shallot and chop finely. Heat 1 tablespoon melted butter in a pan and saute the shallot until soft. Sprinkle with the flour, stir well, and pour in the cider. Stir vigorously using a whisk, so that no lumps form. Pour the cream, season with salt, lemon juice and cayenne pepper, and simmer for 5-8 minutes over medium heat and occasional stirring. Pour the sauce through a sieve and mix until frothy as desired.

Rinse the leeks thoroughly, trim and cut into rings. Saute for 3-5 minutes in a pan in hot oil.

Rinse the apples, cut into quarters, remove the core, and cut into thin sticks. Heat the butter in a pan and braise the apples in it until colorless. Sprinkle with sugar, briefly caramelise, and add the remaining lemon juice, ½ teaspoon of lemon zest and about 100 ml (approximately ½ cup) of water. Let cook for about 3 minutes over low heat.

Take the apples out of the pan and drain well. Place the cooked apples into the center of each beef slice and roll up.

Put some cider sauce on plate and arrange the fried leeks on it. Put two beef rolls over, season with salt and pepper, and serve garnished with fresh horseradish.
