Ingredients

For the beef and vegetables
500 grams lean Beef (for pan-frying)
100 grams carrots
60 grams Celery
60 grams Broccoli
1 Red chili pepper
1 garlic clove
1 pc ginger (about 1.5 cm)
vegetable oil (for frying)
3 Tbsps soy sauce
2 Tbsps Rice wine
salt
freshly ground peppers
For the marinade
2 Tbsps soy sauce
1 Tbsp Rice wine
1 Tbsp sesame oil
1 tsp sugar

Preparation steps

For the beef and vegetables, cut the beef into thin strips and place in a shallow dish. For the marinade, combine all of the ingredients for the marinade and mix with the meat. Cover and marinate for about 30 minutes.

Peel carrots and cut into thin matchsticks. Trim, rinse and slice the celery. Divide broccoli into small florets. Rinse chile pepper, trim, remove the seeds, remove all white ribs and cut into fine strips. Peel garlic and ginger and finely chop. Heat oil in a pan and working in batches, stir-fry the marinated meat 2-3 minutes. Then remove and drain on paper towels. Wipe the pan with paper towels. Heat 3 tablespoons oil in a pan and fry garlic and ginger briefly. Add carrots, celery and broccoli, stirring constantly for 3 minutes. Add beef and season with soy sauce, rice wine, salt and pepper to taste. Serve sprinkled with chile pepper strips.
