- For the hummus
- 2 cups canned chickpeas (drained)
- 2 Tbsps extra virgin olive oil
- 2 Tbsps lemon juice
- 1 Tbsp Tahini
- ½ clove garlic cloves (minced)
- ground Cumin
- For the wraps
- 4 Flour tortillas
- 4 large leaves round lettuce
- 2 large vine Tomatoes (sliced)
- 1 cup Bean sprout
- salt
- freshly ground peppers

Preparation steps
1.
For the hummus: Combine the chickpeas, olive oil, lemon juice, tahini, garlic, cumin, two tablespoons of hot water, and seasoning in a food processor. Blend until smooth, scraping down the sides if needed.
2.
To assemble: Spread the tortillas evenly with the hummus, stopping a few centimetres short of their borders.
3.
Top with a lettuce leaf and then the beansprouts, spreading them out evenly.
4.
Sit the tomatoes on top, seasoning them with a little salt and pepper before folding over and serving.
