- 200 grams Flageolet beans (dried)
- 2 Red onions
- 1 bunch parsley (chopped)
- 2 Tbsps vegetable oil
- 150 milliliters Vegetable broth
- 3 Tbsps White vinegar
- 1 bay leaf
- salt
- freshly ground peppers

Preparation steps

Soak the beans overnight.

Peel and finely chop the onions. Heat the oil in a pan, then add the beans and bay leaf, and pour in the broth. Cover and simmer for 15 minutes. Remove from the heat, and season to taste with salt, pepper, and vinegar. Remove the bay leaf and stir in the parsley. Adjust the seasoning if necessary, and serve.
