400 grams Perch fillet
1 Tomato
1 shallot
2 Limes (Juice)
1 Tbsp olive oil
1 Tbsp Mustard
1 bunch Basil

Preparation steps

Separate lettuce into leaves, rinse, pat dry. Slice fish diagonally into very thin slices. Rinse tomatoes, cut in half, remove seeds and finely dice. Peel shallot and finely dice. Mix marinade of lime juice, olive oil, mustard, salt, pepper and shallots. Stir, pour over fish slices, and marinate 5 minutes.

Blanch salad in boiling water for 5 minutes, rinse with cold water, pat dry. Pluck basil leaves. In each curl Salatbatt 1 slice of fish and 1 basil leaf. Serve 4 rolls to a plate, garnish with diced tomatoes and remaining basil.
