Preparation steps

For the dough: Coarsely chop almonds and finely chop candied fruit. Loosen potash in 2-3 tablespoons of kirsch. Melt honey in a large saucepan and heat to 60°C (approximately 140°F) - do not boil! Add sugar, cinnamon, cloves, lemon zest and nutmeg. Stir in almonds and candied peel. Remove pan from heat and alternately stir in flour, dissolved potash and remaining kirsch. Add in any remaining flour and knead while dough is still hot. Roll out about 0.75 cm (approximately 1/4 inch) thick.

Preheat oven to 175°C (approximately 350°F). Line a baking sheet with parchment paper.

Cut rectangles from the dough and place tightly together on baking tray. Bake for 15-20 minutes. While still hot cut as needed and remove from sheet. For the glaze: Mix icing sugar with lemon juice and rum and pour over dough while still hot. Allow glaze to dry and serve with coffee or tea.
