- 8 ozs Pearl barley
- 3 carrots
- 2 onions
- 2 sticks Celery
- 1 garlic clove
- 3 ozs Bacon (in slices)
- 4 ozs Mushrooms (such as button mushrooms, oyster mushrooms, or portabellas)
- ½ bunch parsley
- 1 bay leaf
- 1 Tbsp butter
- 14 ozs Beef broth
- Red wine vinegar
- salt

Preparation steps
1.
Trim and peel the carrots and dice fine.
2.
Peel the onions and garlic and dice fine.
3.
Rinse and trim the celery and chop fine.
4.
Cut the bacon into small cubes.
5.
Clean mushrooms, coarsely chop.
6.
Rinse and dry the parsley and chop.
7.
In a sauté pan, heat the butter. Add the bacon, onion and garlic and sauté. Add the carrots, celery, and mushrooms and stir in the broth. Add the bay leaf and barley and simmer, covered, over low heat for about 1 hour. The liquid should be almost completely absorbed. Stir the pilaf to fluff the barley. Remove bay leaf and fold in the parsley.
To serve, season with vinegar, salt, and pepper.
