- 1 medium Sweet potato
- 2 tsps butter
- ½ large white onion (sliced)
- 6 cloves garlic cloves (lightly roasted)
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- freshly shaved Parmesan (to taste)

Preparation steps
1.
Preheat oven to 400 degrees F/ 200 degrees C. Line a baking sheet with aluminum foil and set aside.
2.
Using a fork, pierce the potato several times. Microwave potato on high for 5 minutes.
3.
Heat butter over medium-low heat in a pan. Add the onion and saute until caramelized, about 8 minutes. Add in the garlic cloves and cook another minute. Remove from heat.
4.
Make a large lengthwise slit down the center of the potato, spreading slightly open. Season potato with salt and pepper and top with the cooked onions. Garnish with shaved Parmesan to serve.
