Baked Sea Bass in a Salt Crust

1 Sea bass
1 ½ kilograms coarse Sea salt
1 egg white
4 Tbsps lemon juice

Preparation steps

1.

Rinse fish and pat dry. Whisk egg whites with lemon juice, combine with salt and mix until mixture il pliable, but not too thin. Add some water, if needed. 

2.

Line baking sheet with parchment paper and spread almost half of salt onto it in an oval shape. Top with fish and cover fish with remaining salt. Press firmly to cover fish with salt from all sides. 

3.

Bake in preheated oven at 200°C (approximately 400°F) for about 30 minutes. Remove from oven, break salt crust and transfer fish to a serving plate. Serve.
