Preparation steps

Preheat the oven to 200 ° C convection.

Scrub potatoes thoroughly and pat dry. Place on a sufficiently large piece of parchment paper. Season with sea salt and drizzle with oil. Crush caraway and coriander seeds in a mortar and sprinkle over potatoes. Rinse herbs, shake dry, pluck off leaves and spread over potatoes. Fold in paper and seal well. Arrange on a baking sheet.

Bake in preheated oven at 200°C (approximately 400°F) for about 40 minutes.

Peel garlic, chop and grind finely with salt. Combine with quark and add chives and sage, season with salt, lemon juice and pepper.

Arrange potatoes on plates and serve with the dip. If desired, drizzle potatoes with melted butter.
