Preparation steps

Preheat the oven to 200°C (approximately 400°F). Rinse the potatoes, pat dry and brush with oil. Add coarse salt to a baking dish and place the potatoes over it, season with more salt and pepper, and place bay leaves around the potatoes. Cover with aluminum foil and bake in the preheated oven for about 30 minutes, then remove the foil and bake for an additional 10 minutes.

To serve, score the potatoes, open slightly, add a dab of creme fraiche and some diced ham. Serve immediately.
