- 1 young Pike (about 1 kg, ready to cook)
- salt
- freshly ground peppers
- 1 bunch parsley
- 1 Tbsp butter
- 1 Tbsp lemon juice
- Aluminum foil
- For grape
- 20 grams smoked Bacon
- salt

- 1 onion
- 2 Tbsps butter
- 400 grams white Grape (halved)
- ⅛ l Vegetable broth
- to garnish
- 1 fresh Grape (a handful)

Preparation steps
1.
Cut off head and tail fins from fish. Rinse fish, pat dry and season with salt and pepper. Melt butter with lemon juice in a small saucepan.

Brush a large piece of foil with lemon-butter. Place fish on top. Fold and seal foil and place on a baking sheet. Bake in a preheated oven at 220°C (approximately 425°F), 25-30 minutes.

Cut bacon into very small cubes. Peel and cut onions into small cubes. Heat butter in a pan and sauté onions and bacon. Add grapes and sauté 5 minutes more. Deglaze with vegetable stock and season with salt and pepper.
4.
To serve, spoon the grapes onto a plate and top with pike. Garnish with fresh grapes.
