Preparation steps

1.

Sift flour onto work surface and shape into a pile and make a well in the center. In a bowl, mix eggs and season with a pinch of salt. Add eggs to center of well and vigorously knead dough for about 15 minutes until dough is smooth and elastic. Shape into a ball and cover with plastic wrap. Let rise for at least 30 minutes.

2.

On a floured surface, roll out dough until very thin and let rise for about 10 minutes.

3.

Peel onions and chop. In a pan, heat butter and fry bacon until crispy and drain bacon on paper towel. Add onion and cook until translucent. Let cool.

4.

Cut dough into squares. Add dough squares and 1 tablespoon oil to boiling, salted water. Cook for about  6 minutes until al dente. Drain noodles in a colander.

5.

Preheat oven to 200°C (approximately 400°F).

6.

Mix bacon and onions and season with salt, pepper and nutmeg and stir in cream. Arrange noodles and cream mixture in a casserole dish and place butter pieces evenly over mixture. Bake for about 15-20 minutes.

7.

To serve, sprinkle with caraway seed and parsley.
