- 4 sticks Leeks
- salt
- 200 grams cooked ham (sliced)
- 100 milliliters Whipped cream
- 100 milliliters Beef broth
- 150 grams Crème fraiche
- 2 eggs
- 100 grams grated Cheese (such as Gryuère)
- freshly ground peppers
- Nutmeg
- Chervil (for garnish)

Preparation steps

Preheat oven to 180°C convection (approximately 350°F).

Rinse and trim leeks, and cut crosswise in half or into thirds, depending on size. Blanch leeks in salted boiling water, 2-3 minutes. Let drain. Wrap each piece leek with 1-2 slices of ham and place in a casserole dish. In a bowl, whisk together cream, broth, creme fraiche, eggs and cheese. Season with salt, pepper and nutmeg. Pour cream mixture over leeks and bake until surface is golden-brown, 25-30 minutes.

Serve garnished with chervil.
