- 1 onion
- 1 garlic clove
- 4 Tbsps black, pitted Olives
- 2 sprigs oregano
- 6 Tomatoes
- 4 Tbsps olive oil
- 2 Tbsps White vinegar
- salt
- freshly ground peppers
- 4 slices Goat cheese (each about 100-120 grams)
- oregano (for garnish)

Preparation steps

Peel the onion and cut into rings. Peel garlic and chop finely. Drain the olives. Rinse the oregano, shake dry and chop the leaves. Rinse the tomatoes, quarter, core and dice into small pieces. Mix with the olives, onion rings, garlic, oregano, oil and vinegar and season with salt and pepper.

Brown the slices of goat cheese in a hot pan with oil on both sides, remove from pan and arrange on plates. Spread the tomato salad around cheese and garnish with oregano. Serve with fresh baguette slices, if desired.
