Baked Tomatoes Stuffed with Goat Cheese
Preheat the oven to 180°C (approximately 350°F) convection. Rinse the tomatoes, remove the stems and cut a lid from each. Hollow the tomatoes carefully leaving a 1/2-inch border all around.
In a bowl, mash the goat cheese with a fork and mix with the eggs. Season with salt and pepper. Spoon the goat cheese mixture into the tomatoes and place a basil leaf on top of the filling. Place the lid on the tomatoes and place the stuffed tomatoes in a baking dish. Bake until the tomatoes are piping hot and the filling is set, about 20 minutes.
