- 1 ½ cups sugar
- 3 cups gluten-free all purpose flour
- 1 tsp gluten-free Baking powder
- ¼ tsp salt (finely grated zest and juice)
- ¼ tsp lemons (finely grated zest and juice)
- 1 cup unsalted butter
- 1 egg
- 2 cups Cherries (pitted)
- 4 tsps Corn starch

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 23cm x 32cm|9" x 13" tin.
2.
Stir together 225g| 1 cup sugar, the flour, and baking powder in a mixing bowl. Mix in the salt and lemon zest.
3.
Use a fork to blend in the butter and egg until crumbly. Pat half the dough into the tin.
4.
Stir together the remaining sugar, cornflour and lemon juice. Gently mix in the cherries. Sprinkle the mixture evenly over the base. Crumble the remaining dough over the cherry layer.
5.
Bake for about 45 minutes, until lightly brown. Cool completely in the tin before cutting into squares.
