Baked Cod with Crispy Breadcrumbs
Drain the pickles and dice finely. Cut the bacon into small cubes. Peel the onion and cut into small cubes. Wipe the mushrooms with a damp cloth and cut into small cubes. In a frying pan, heat the oil and sauté the bacon, onion and mushrooms for 2-3 minutes. Remove from the heat, mix in the pickles and season with salt and pepper. Let cool slightly.
Preheat the oven to 220°C (approximately 425°F).
Rinse the fish, pat dry and season with salt and pepper. Place on a baking sheet lined with parchment paper. Mix the cheese and breadcrumbs into the vegetable mixture and spread evenly over the fish fillets. Bake until golden brown, about 15 minutes.
Remove from the oven and serve sprinkled with parsley.
