- 1 chicken (ready to cook, about 1.4 k or 3 poundsg)
- 3 garlic cloves
- salt
- peppers
- 2 Tbsps olive oil
- 100 milliliters dry white wine
- 2 bay leaves
- 1 bunch parsley
- 2 Sage
- 1 sprig Lemon balm
- 1 organic lemon (zest)

Preparation steps
1.
Preheat oven to 180°C (approimately 350°F). Rinse chicken, pat dry and cut into 8 pieces. Peel garlic and slice.
2.
Season chicken with salt and pepper and place skin side down in a roasting pan. Drizzle with oil and pour in 1 cup of water and wine. Add garlic and bay leaves. Bake for 20 minutes.
3.
Rinse herbs, shake dry and chop leaves. After 20 minutes, turn chicken pieces, baste with sauce and add herbs and lemon zest. Cook for an additional 25-30 minutes and serve.
