- 4 lean Chicken breasts (each 175 grams)
- 50 grams nonfat Fresh mozzarella
- 2 Tomatoes
- 4 thin slices Ham (raw, smoked without fat)
- 24 Mini Potato Waffles (or 600 grams French fries)
Season chicken breasts with salt and pepper. Drain mozzarella and cut into slices. Rinse tomatoes, pat dry and slice. Cover each chicken breast with mozzarella and tomato and then wrap with ham. Secure each with tooth picks.
Place wrapped chicken breasts side-by-side in a baking dish and bake in preheated 160°C (approximately 350°F) oven for about 30 minutes. Cover with aluminum foil if desired.
After 5 minutes arrange potato waffles on a baking sheet and also bake in the preheated oven. Serve potato waffles on a plate with the baked chicken breast.
