1 kilogram green Asparagus
2 bunches scallions
Sea salt
1 handful fresh Fresh herbs (such as burnet, basil, parsley)
60 grams Herb butter
1 egg white

Preparation steps

Preheat oven to 180°C convection (approximately 350°F).

Rinse asparagus, snap off woody ends and peel lower thirds of each stalk. Rinse, trim and cut scallions into pieces approximately the same length as the asparagus. Place asparagus and scallions on a half of a rectangular piece of parchment paper. Season with salt and sprinkle with plucked herb leaves. Slice herb butter and place on top.

Brush edges of paper with egg white. Place the other half of paper on top and fold edges together to seal tightly.

Place packages on a baking sheet and bake about 25 minutes.

Serve packages, still sealed, on warmed plates.
