- 6 large Apple (Granny Smith, Braeburn, Jonagold, cored)
- lemon juice
- 2 Tbsps water
- 3 Tbsps caster sugar
- ½ cup self-rising flour
- ½ egg
- 1 Tbsp sunflower oil
- ¼ cup 2% milk
- ⅛ cup Cottage cheese
- 1 Tbsp Golden raisins

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4.
2.
Cut the top third off the apples and scoop out the centres, leaving a 'wall' of flesh. Brush the flesh with lemon juice.
3.
Place in a large baking dish with the water. Mark a line with a sharp knife around the centre of each apple, through the skin, but not through the flesh. Bake for 15 minutes, then remove from the oven.
4.
Stir together the sugar and flour in a mixing bowl.
5.
Beat together the egg, oil, milk and cheese until blended.
6.
Add to the flour mixture with the sultanas and stir until just combined.
7.
Spoon into the cavities of the apples and bake for a further 15-20 minutes until the apples are soft and the muffins are cooked through.
