- ¾ oz Yeast (OR 7 g dried yeast)

- 4 ½ cups all-purpose flour
- 1 tsp salt
- 2 Tbsps sunflower oil

- ⅔ cup Sunflower seed

Preparation steps
1.
For the yeast starter, dissolve the yeast in 2 tbsp lukewarm water with a pinch of sugar and add enough flour to form a soft dough. Cover and leave in a warm place for around 20 minutes to start working (the starter should develop cracks in the surface).

Knead in the rest of the flour, the salt and oil and around 220 ml lukewarm water. Cover and leave to rise for a further 40 minutes.

Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7 and line a baking tray with grease-proof paper.

Knead the dough again thoroughly, divide into 4 equal-sized pieces and shape into baguettes. Slash each one gently several times on the diagonal and place on the baking tray. Cover and leave to rise for a further approx. 20 minutes.
5.
Brush the baguettes with water and scatter over the sunflower seeds. Season with a little sea salt and bake in the oven for approx. 45 minutes until golden brown and crusty. Remove from the oven and leave to cool before serving.
