Baguette with Tuna Salad
Cut baguette rolls in half and cover each bottom half with 1/2 tablespoon creme fraiche. Rinse lettuce leaves, shake dry, tear into small pieces and spread over bottom half of baguette. Peel cucumber, cut into thin slices and place on lettuce.
Rinse apples, core and grate coarsely. Drain tuna and flake with a fork.
Mix remaining creme fraiche with sour cream, capers, lemon juice and chives and season with salt and pepper.
Mix 2/3 of chive cream with tuna. Spread tuna mixture on top of cucumbers. Top with grated apple, remaining chive cream and remaining lettuce leaves. Place top baguette halves on top and serve immediately.
