Preparation steps

Mix the egg yolk with a little lemon juice and a pinch of salt. Incorporate the oil, whisking constantly. Start with a few drops at a time, then increase to a thin stream, ensuring that the oil is completely absorbed. Add enough oil to make a thick, creamy mayonnaise.

Season to taste with lemon juice, mustard and salt.

Cut the bagels horizontally. Place the salmon on the bottom halves of the bagels. Spread the mayonnaise over salmon, season with pepper, and garnish with the dill. Cover with the top halves of the bagels, and serve.
