1 cup all-purpose flour
½ cup butter
1 egg
1 tsp salt

4 medium eggs
cup milk
1 cup cream (min 30 % fat)
cup Crème fraiche
¾ cup grated Gruyere
2 onions (finely diced)
2 sprigs parsley (leaves finely chopped)
1 sprig Basil (leaves finely chopped)

Preparation steps

Pulse together the flour, butter, egg and salt in a food processor until a rough dough comes together. Briefly and gently shape into a round. Wrap in clingfilm and chill for 30 minutes.

Preheat the oven to 190°C (170° fan) | 375F | gas 5.

Roll the pastry out thinly on a lightly floured work surface and carefully shape into the quiche dish, forming a crust around the edge.

For the filling: Beat the eggs and add the milk, cream, crème fraîche, cheese, onions, herbs and bacon. Mix together, season with salt and pepper, and pour evenly over the pastry base, ensuring a level surface.

Bake in the hot oven for 40-45 minutes until golden brown. Serve hot or cooled.
